Florentine Cookies

Yield: 12 servings
Ingredients:
½ cup + 4 Tbsp. brown sugar
8 Tbsp. butter
4 Tbsp. honey
3 tbsp. all purpose flour
½ tsp. salt
1 tsp. best quality vanilla bean extract or paste
1/2 cup raw cashew pieces
1/2 cup raw sliced almonds
Directions:
Preheat the oven to 350F (175C).
In a saucepan on medium high heat, add honey, butter, brown sugar, and constantly stir until it comes to a boil. Remove from the heat and set aside.
Add vanilla, flour and salt and mix until well combined. Fold in almonds and set in the fridge to cool for at least 30 minutes.
With your hands, shape dough into 1” flat round disks and place on parchment paper or a silicone mat on a sheet pan at least 3” apart.
Bake for 12 minutes or until golden brown.
Remove from the oven and use a cookie cutter to cut them into a perfect round shape.
With a mini offset spatula, gently peel cookies off of the parchment or silicone mat. Line them on a piece on a sheet pan lined with parchment paper. Pipe a small amount of melted chocolate on top and sandwich it with another cookie.
Lay sandwiched cookies on a sheet pan line with parchment paper and drizzle chocolate on ¼ or ½ of the cookie. Allow to cool, serve and enjoy!
