Ginataang Kalabasa Puff Pie (Coconut Ginger Squash Puff Pie)

Ingredients:

  • (1) ¼ sheet of puff pastry

  • 1 1/2 - 2 cups or ½ of a butternut or Kabocha squash, sliced thin (¼”)

  • 4 cloves garlic, sliced thin

  • 1 small onion, sliced thin

  • 1 cup coconut cream

  • 1 Tbsp. fish sauce

  • 1 Tbsp. fresh ginger, finely grated (best if peeled and frozen, then grated on a Microplane)

  • ¼ tsp. ground black pepper

  • 1 Tbsp. Filipino spicy vinegar (pinakurat, coconut, cane or palm)

  • 1 Tbsp. muscovado sugar or dark brown sugar

  • arugula (optional)

  • flour (for dusting


Other Things You’ll Need:



Directions:

  1. Roll out or cut puff pastry to fit a 1/4 sheet pan.  Lay on a sheet pan prepared with parchment paper or a silicone baking mat.  It’s okay if the edges of the puff pastry dough reaches the botom sides.  Set aside in the freezer.

  2. In a small bowl, add coconut cream, fish sauce, grated ginger, black pepper, and mix until well combined.  Set aside with a Tbsp.

  3. When ready to bake, preheat oven to 400F (205C).

  4. Drizzle and spread 2-3 Tbsp. of the coconut cream mixture on top of the puff pastry dough.

  5. With the leftover coconut cream mixture, make a dressing by adding the Filipino spicy vinegar and brown sugar.

  6. Strategically place a layer of squash, onions and garlic on top of the coconut cream.  Start with the big pieces and think about space and direction of each piece.  Only place 1 layer to allow the squash to cook thoroughly. 

  7. Drizzle 1 more tablespoon of the coconut mixture on top of the veggies and bake at 400F (205C) for 25-30 minutes or until veggies are roasted and the puff dough is golden brown on the bottom and edges are puffed.  You may have to turn the pan half way through the baking process to cook evenly.

  8. Add arugula on top and drizzle with the Coconut Dressing.  Cut into squares, serve and enjoy!
