Ube Brownies




Ube Brownies

Total Preparation and Baking Time : 40 min.

Yield: 12-16 servings


Ingredients:

  • 8 oz. white chocolate

  • 1 cup butter

  • 6 eggs

  • 1 cup white sugar

  • 1/2 cup brown sugar

  • 1 Tbsp. Ube extract 

  • 4 Tbsp. Ube powder 

  • ¼ cup Ube Halaya (Ube Jam or Spread)

  • 2 cups flour 

  • 1/4 tsp. salt

Directions:

  1. Preheat oven to 350° F.  Melt butter until brown bits start to appear at the bottom.  

  2. Add chocolate to a bowl and pour the brown butter over the chocolate, allowing the residual heat to melt it.  Continue to stir and allow it to mix together like ganache.

  3. In a stand mixer bowl, fitted with a paddle attachment, add granulated sugar, brown sugar, Ube powder, Ube Halaya, and eggs. Scrape between mixing to avoid lumps.

  4. Add vanilla extract and stream in browned butter and white chocolate ganache.

  5. Add the flour, and mix on medium speed. Scrape between mixing. Avoid over-mixing. 

  6. Fold mix-ins (like chocolate chunks, nuts or dried fruit,  if there are any. 

  7. Pour into a greased and parchment-lined 9”x9” square baking pan (with metal bulldog clips to keep the parchment edges from falling down) and bake at 350° F for 30 minutes or until top is crackly.  Take it out of the oven, tap about 3-5 times and place it back in the oven for 10 more minutes.

  8. Allow to cool before cutting and enjoy!
